Here is a link to order the cookbook I helped write. It was made completely by the students of Metropolitan community college. The proceeds of this book is for a scholarship in honor of Brandon, a student that attended the college, but was in a motorcycle accident that took his life. His family in cooperation with the school came up with the idea for this book.
It was then decided to hold a class that would design the cookbook from concept of menu to the marketing. The fine dining restaurant at the school is called the Bistro. The class decided to set up the cookbook in seasons, like they do at the restaurant. Each season has four courses, appetizer, soup or salad, entrée and dessert ( that was my contribution); except for the fall season and we decided to dedicate this to Brandon. Thanksgiving was his specialty at home. So this season is set up in family style with extra recipes.
The cookbook was designed to show techniques that we learn at the school, in cooking as well as plating, something that I think is left out of most cookbooks on the market. The recipes were also designed for the home cook, the use of home tools and equipment.
