Peach Stacks

Ingredients:
- 1 egg
- 1 1/2 cup of milk
- 3 T butter
- 1 t molasses
- 1 1/2 cup of flour
- 3 t baking powder
- 1/2 t of salt
- 1/4 cup of sugar
- 1/4 cup of brown sugar
- 2 cups of pureed peach.
My mom has a peach tree, that means we get a lot of peaches in the summer. For this recipe, I used peaches that have been already cooked and season with spices like cinnamon and nutmeg. I recommend if you are using fresh that you cook them in a pan until soft with butter and then season them. Or you can buy the already canned cut up peaches.
You can leave the peaches whole if you’d like, but i added more whole peaches on top instead of in the pancake batter.
here’s what i did:
I started off with the sugar and the egg and whipped those for a little bit until i could see some air was incourpated. Added the rest of the liquid and then slowly added in my dry ingredients. I added the pureed peach in last and started making the stacks. Super easy and everybody loves pancakes so why not?
