Friend’s Dinner

Throughout the crazy in our own lives, we must think about the people around us. I care for these two like I would my own family. My way of showing I care is through my food. I make you delicious dinners to show my love because that’s how I know best.

My best friend and her husband have been going through a rough patch recently in their lives. Sickness, deaths in the family, and other problems. I’m not going to share too much because I don’t want to invade their privacy, but everybody needs to be reminded that somebody does care deeply. Life is short and we do have to go through the bad times to remind us those good days are still ahead. It may not seem like it at the time but it’s happening. That value of patience is hard to keep and we all know why.

I’ve been making them dinner every once in a while. They come over and I create a home-cooked meal that will let them know I am thinking about them. We crack open a bottle of wine, or vodka if it does come to those really tough nights. Here’s what I made for them this week. I really wanted to treat them to steak but I just didn’t have it in me to make that this week. It’s been crazy in my life too so having something simple but comforting was important.

If you don’t know how to show your love, try giving people a home-cooked meal. You can always buy some treats too. *Wink*

If you can’t cook or it turns out worse than expected, just tell them you gave it your all and you wanted to show them how much they mean to you. People that are in our lives should not be taken for granted. I enjoy the company of these two people and cherish them so much as if apart of my own family.

Oven Roasted Carrots

  • Take about ~5 whole carrots
  • Peel and cut into smaller bite-sized pieces
  • Cover with oil, pepper, and salt on baking sheet
  • @ 350 F until able to poke through with a fork
  • Plate & serve hot!

This is a to-go side dish that is simple and good for last-minute dinners!
