Spaghetti: A tale of Many


Spaghetti is a great equalizer.

It is a great medium to showcase flavor.  Do you want a fresh light dinner, make pasta primavera. It uses a bunch of different veggies with a squeeze of fresh lemon and a light dusting of parmesan. Want something a little more hearty? Make a marinara and serve it with meatballs. How about something in between? Make a garlic butter sauce and sauté shrimp and dinner is served.

Earlier this week I made a whole pound of spaghetti noodles, and served it with marinara and meatballs, knowing I could use them for leftovers, I am only cooking for two. I let them cool down to room temperature and then put them in a plastic bag. My husband could eat the leftovers like it was for lunch, but he didn’t, so I made the garlic shrimp version for dinner the next night.

As you probably know if you have read any of the other blogs, I like variety.  So I decided to freeze the noodles, just stuck the bag of noodles in the freezer, so I could use them later. I left with some friends over the weekend to a woman’s conference and it was close to dinner the night I returned, and I pulled out the noddles, ran hot water over them till they were defrosted. I used some veggies in the fridge, peppers, broccoli, onion and cherry tomatoes gave them a light saute’ in butter, squirted them with half a lemon, threw in the noodles to heat them up and there you have it, pasta primavera.  Just toss some parmesan cheese on top and in less than 30 minutes you have dinner.

A jar of pre-made pesto and said noodles and you’re a kitchen goddess.  Another option is puttanesca sauce, some canned diced tomatoes, capers, and black olives, some Italian herbs, olive oil and you have another quick dinner. You can also use the pre-made noodle to make baked spaghetti.

Spaghetti noodles are not just for dinner, one of my favorite ways too use left-over noodles is to sauté them in butter and crack an egg over them and top with some shredded cheese. It’s like an instant kugel.  Imagine if you have bacon bits or ham, yummy breakfast.

Meal planning is not my forte, I am never sure what I will be hungry for in an hour, much less 4 days from now. However, having these few simple sauce/ingredient options will make quick meals a great tool in your dinner/meal arsenal, and these ideas work with more than just spaghetti noodles, make extra of any pasta and you have a couple of quick ready-made meals.
