Chicken Chili

So my partner and I have been on a diet recently and it’s getting to that point where I am tired of making my food for every meal. I had class tonight so I did not want to come home and take 30 minutes to prepare dinner for ourselves. This is where this great recipe come in!

I go to school for at least 6 hours two days out of the week and I just don’t have it in me to create a healthy, calorie-counted, delicious perfect meal. This one day I was okay with throwing things in the crockpot and hoping they come out for the better.

Here’s what I used:

  • 3 Chicken Breast 
  • 2 15oz cans on tomato sauce (low sodium/no added salt) 
  • 2 15oz cans of black beans (use whatever beans you have on hand)
  • 2 cups of broth
  • 1 medium onion, yellow
  • 2 celery stalks
  • 3 carrots
  • 1 teaspoon of garlic, minced

I threw this in the crockpot on low for 7 hours and it turned out amazing. I typically top my chili with cheese, avocado, raw onions, and sour cream with a little bit of hot sauce.

TIP* Don’t be afraid to add something that you typically wouldn’t add to your chili. It’s always about trial and error when trying out new dishes.  

If you wanted to make this vegan/vegetarian you can add more beans instead of the chicken and use squash or sweet potato. I always like to add my veggies to my chili but I also LOVE  my vegetables.

My chili seasoning:

  • 2 T chili powder
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t dried oregano
  • 3 t of cumin
  • 1 t of paprika

For those who like it spicy add:

  • 1 t cayenne pepper
  • 1 t crush red pepper flakes
