Stawberry Vinaigrette

pad thai 049This was a very delicious salad.  I am taking care of the garden at our church. We have solved the problem of deer grazing on our green goodies.

I picked some spring mix of lettuce, and a few strawberries and thought about this for lunch. The dressing is super easy with a blender or food processor.


6 medium strawberries, washed and quartered
3 T red wine vinegar
1 T sugar
2 cups canola oil
salt and pepper to taste


  1. Place strawberries, sugar, vinegar, salt and pepper.  Blend till smooth.
  2. Slowly add the oil till completely emulsified.

I didn’t do this in the picture for aesthetic  purposes, but to dress the salad, mix the greens and squirt, ladle or spoon the dressing around the outside of the bowl. Then with your hands gently lift and turn the greens until they are dressed but not dripping with vinaigrette. Place the toppings over the greens. I added red onions, goat cheese, toasted almonds and strawberries.
