Apple Fennel Salad





I think that this might be my new favorite salad. It is just so fresh and crunchy and it is quite simple to make.


1 granny smith apple, Julienne
1 fennel bulb, Julienne
1/4 red onion, Julienne


2 T lemon juice
2 T apple cider vinegar
1 tsp fresh ginger, minced
1 T sugar
1/2 tsp salt
1/2 tsp pepper
1 cup canola oil


  1. Julienne apple and squeeze fresh lemon juice over it.  Reserve 2 T for dressing.
  2. Julienne the fennel and the onion.  Reserve the fennel fronds to garnish.
  3. Mix  the dressing: put the sugar, salt, pepper, and ginger in a small bowl.
  4. Add the lemon juice and the cider vinegar and dissolve by stirring.
  5. Slowly drizzle in the oil until a temporary emulsion begins.
  6. Toss over the apple, fennel and onion pieces.
  7. Snip the fennel fronds into small pieces and garnish.

Crunch away.  If you don’t want to make your own vinaigrette, a poppy-seed dressing would probably complement this dressing or even a simple dab of yogurt even.
