Black Bean Tortilla

These are the best tortillas I have ever tasted, and wonderfully easy to make if you have a food processor.

I used them to make chicken fajitas. Yum!!

Flour black bean tortillas

3 cups unbleached (or all-purpose flour)
½ teaspoon salt
1 cup canned black beans, drained
1/3 cup canola or vegetable oil
2/3 cup warm water


  1. Place flour, salt, black beans and oil in processor bowl. Process for a few seconds to blend.
  2. Slowly pour in water until dough forms a ball. Divide dough into 12 -15 equal pieces, roll into balls, cover with plastic wrap, and let rest for at least 30 minutes before baking.
  3. Roll balls out flat with a rolling-pin, and cook in an oiled pan for a minute or until browned on each side.
  4. Keep cooked tortillas in foil and paper towel wrapping till ready to use.
